There are some places that are so popular, you know you’re in for something special before you even step inside. This was certainly the case when we visited a renowned spot known for its incredible seafood in the Taean/Seosan area. The buzz, the slight wait even with a reservation made via production staff’s phone, and the tantalizing aroma in the air promised a memorable meal.
A Culinary Journey to Taean’s Seafood Heaven
Famous for its fresh seafood, especially crabs, the coastal region of Taean and Seosan in South Chungcheong Province offers unique flavors you won’t find just anywhere in Korea. Our destination was a restaurant that has built a reputation for serving traditional dishes with exceptional ingredients.
Signature Dishes That Tell a Story
The menu featured classic Korean crab dishes like Ganjang Gejang (soy-marinated raw crab) and Yangnyeom Gejang (spicy marinated raw crab). These are staples, but the quality of the crab makes all the difference. We were told that the crabs from this region, particularly at this time of year, are exceptionally plump and full of roe and meat due to the clean waters and abundant food supply.
But the real intrigue lay in the more regional and unique offerings:
- GyeGukJi: This dish was truly unique. Described as a traditional stew or kimchi, it’s made using crabs that have been preserved (similar to gejang) and then pounded with garlic and other ingredients. This paste is then mixed with outer cabbage leaves, buried in a pot, and later simmered. The version served here was a hearty, slightly spicy soup or stew that carried the deep, complex flavor of fermented crab. It was a revelation, a taste unlike anything else, simultaneously unfamiliar and deeply satisfying. The reaction around the table was surprise followed by pure delight at the intense, savory ‘jang’ (fermented paste) flavor and the hint of sweetness and spice from the cabbage and broth.
- Ureok Jeotguk: Another local specialty, this is a clear soup made with semi-dried rockfish (ureok) and fermented shrimp paste (saeu-jeot). The rockfish is air-dried, giving it a slightly chewy texture and concentrated flavor. Cooked gently in a clear broth seasoned primarily with saeu-jeot, the soup is incredibly refreshing and clean, yet packed with umami. It has a unique, slightly pungent aroma from the semi-dried fish and fermented paste, which might be divisive for some, but for those who appreciate subtle, deep seafood flavors, it’s a truly addictive experience. It was praised for its cooling yet flavorful profile.
The Main Event: Ganjang Gejang & Yangnyeom Gejang
While the unique stews were highlights, the marinated crabs themselves were outstanding. The Ganjang Gejang, known for being potentially very salty, was noted for its balanced seasoning. It wasn’t overly salty, allowing the natural sweetness and rich, creamy texture of the crab roe and guts to shine. The Yangnyeom Gejang offered a different kind of pleasure – a vibrant, spicy sauce coating the fresh crab, creating a harmonious blend of heat and sweetness.
Eating these dishes the traditional way – mixing rice with the rich crab innards and roe scooped from the shell – was an absolute joy. The table quickly became a scene of enthusiastic consumption, with everyone remarking on the freshness and quality of the crabs. The side dishes, including fresh kimchi and seasoned seaweed, complemented the main courses perfectly.
The restaurant owner even made an appearance, sharing a bit about the history of GyeGukJi and how it has evolved from a dish utilizing leftover or over-fermented crabs into a beloved local delicacy. Her passion for preserving these traditional flavors was evident.
