Seoul’s Best Ganjang Gejang: A Delicious Journey to Jinmi Restaurant in Mapo

If you’re a fan of Korean cuisine, especially Ganjang Gejang (간장게장), soy sauce marinated crab, then Jinmi Restaurant (진미식당) in Mapo, Seoul, is a place you absolutely must visit. Known as a mecca for Ganjang Gejang lovers, Jinmi Restaurant has garnered fame and recognition, even being listed on the Michelin Plate. But its reputation isn’t just recent; Jinmi has been a beloved spot for locals long before Michelin accolades.

A Taste of Tradition and Flavor

Located conveniently between Aeogae Station and Gongdeok Station in Mapo, Jinmi Restaurant offers an authentic Ganjang Gejang experience. While they don’t have their own parking lot, they provide 1-hour parking support at the nearby Korea Academy Tell parking lot. Just be sure to get a parking ticket from the restaurant, and keep in mind that parking can sometimes be limited.

Seoul boasts several other renowned Ganjang Gejang restaurants, including Hwahaedang (화해당) in Yeouido and Gaeseongsikdang (개성식당) near Gangnam-gu Office Station. Hwahaedang, with its main branch in Taean, is also famous and has earned a Michelin Bib Gourmand. Gaeseongsikdang is known for its modern interior and is also Michelin recommended. However, Jinmi Restaurant holds its own unique charm and flavor that keeps customers coming back.

The Jinmi Experience: What to Expect

Jinmi Restaurant operates on a reservation system, so calling ahead is highly recommended. They offer Ganjang Gejang Jeong-sik (set menu) for ₩41,000 and takeout for ₩38,000. Takeout portions are slightly cheaper but do not include side dishes. Interestingly, some customers feel the takeout crabs are slightly larger!

What sets Jinmi apart is their use of Jin-ganjang, a dark soy sauce, resulting in a slightly sweeter marinade compared to other places. They use Seosan crabs, known for their quality and freshness. When you visit, expect a homely atmosphere reminiscent of a traditional Korean house. The interior features floor seating and walls adorned with signatures from famous patrons.

One of the most surprising aspects of Jinmi is the lightning-fast service. Within a minute of being seated, your Ganjang Gejang will arrive! This is likely due to their reservation system and pre-preparation of ingredients, ensuring a seamless dining experience.

Savoring the Ganjang Gejang

Jinmi’s Ganjang Gejang is a true delight. Each set typically includes two crabs per person. The crabs are generously topped with sesame seeds and sliced Cheongyang chili peppers, adding a touch of spice and aroma (though some may prefer to remove the chili). The crab roe is a highlight, featuring both orange and yellow roe, each with a distinct flavor profile. The orange roe is richer and saltier, while the yellow roe is milder and creamier, melting in your mouth like butter.

The side dishes are also noteworthy, including Ge-gukji (crab kimchi soup), a spicy and flavorful soup with crab and kimchi, and steamed egg ( 계란찜). Other side dishes like seasoned bean sprouts and mushrooms complement the main dish perfectly.

To best enjoy Ganjang Gejang, mix the crab roe and sauce with rice. A ratio of 1:3 (sauce to rice) delivers a strong flavor, while 1:1 to 1:2 offers a milder taste. The sweet and savory flavors of the crab meat and roe are incredibly satisfying and addictive.
